Posole

Ingredients
1lb Tenderloin trimmed and cut into bite sized pieces
2 teaspoons - Salt Free Southwest Chipotle seasoning (Mrs Dash) if you like food spicy add more
1 can of white Hominy undrained
1 can (14.5oz) of Mexican style stewed tomatoes with jalapeƱo peppers
1.5 cup (or more if you like it more soupy) low sodium V8 juice
1/4 cup chopped fresh cilantro
Heat up saucepan (coat with coconut oil or olive oil) add pork to pan and cover with the Chipotle seasoning. Cook about 4 minutes our until browned. Stir in Hominy, tomatoes and V8 juice. Bring to a boil and then cover, reduce heat and let simmer for 20 minutes to tender the pork. Stir in the Cilantro.

Jogging update
I jogged 2.75 miles last night. It was allot better than this weekends run. I think for 3 reasons. 1 I am more of a night owl than a morning person. 2. I plenty of fuel in me from eating throughout the day. 3. I had my own music which helped allot.
